Salmon Patties with Cucumber Dill Sauce

This recipe for Salmon patties is a great option for lunch or dinner. Canned salmon makes prep a breeze. Serve with a salad or add it to a bun with some greens to create a delicious sandwich.

Ingredients
  

Patties
  • 2 (5 oz) cans of Boneless, Skinless Salmon Drained
  • 1/3 cup onion diced
  • 1/4 cup red bell pepper diced
  • 1/4 cup green bell pepper diced
  • 1 egg
  • 4 tbsp egg white
  • 1/2 cup plain bread crumbs
  • 2 tbsp nutritional yeast
  • 1 tbsp old bay seasoning
  • 1/2 tbsp ground black pepper
  • 1 tbsp lemon juice
Sauce
  • 2/3 cup cucumber diced
  • 2/3 cup non-fat Greek yogurt, plain
  • 1/2 tsp dried dill
  • 2 garlic cloves crushed

Method
 

  1. Preheat oven to 425°
  2. In a bowl mix all ingredients for the patties until combined
  3. Form into four patties. Spray a baking sheet with cooking spray and place patties on sheet.
  4. Bake for 15 minutes. Flip and bake for an additional 5 minutes.
  5. While patties cook, combine sauce ingredients in a small bowl.
  6. Serve patties topped with sauce.
