Salmon Patties with Cucumber Dill Sauce

INGREDIENTS

Patties

  • 2 (5 oz) cans of Boneless, Skinless Salmon
  • 1/3 c. onion, diced
  • 1/4 c. red bell pepper, diced
  • 1/4 c. green bell pepper, diced
  • 1 egg + 4 tbsp egg white
  • 1/2 c. plain bread crumbs
  • 2 tbsp. nutritional yeast
  • 1 tbsp old bay seasoning
  • 1/2 tbsp ground black pepper
  • 1 tbsp lemon juice

Sauce:

  • 2/3 c. diced cucumber
  • 2/3 c. non-fat greek yogurt, plain
  • 1/2 tsp dried dill
  • 2 garlic cloves, crushed

INSTRUCTIONS

  1. Preheat oven to 425°
  2. In a bowl mix all ingredients for the patties until combined
  3. Form into four patties. Spray a baking sheet with cooking spray and place patties on sheet.
  4. Bake for 15 minutes. Flip and bake for an additional 5 minutes.
  5. While patties cook, combine sauce ingredients in a small bowl.
  6. Serve patties topped with sauce.
