Ingredients
  

  • 1/2 cup chocolate whey protein powder
  • 2 tsp coconut flour
  • 1/4 tsp baking powder
  • 1/4 cup coconut sugar (or use swerve for WW friendly)
  • 1/4 tsp salt
  • 1 large egg
  • 3 tbsp liquid egg whites (or 1 large egg white)
  • 1/2 tsp vanilla
  • 1/2 cup peanut butter

Instructions
 

  • Preheat oven to 350° F
  • In a small bowl, combine protein powder, coconut flour and baking powder Stir to combine
  • In a medium bowl combine coconut sugar, salt, egg, egg white, vanilla and peanut butter. Stir until well combined.
  • Slowly add protein powder/coconut flour mixture to bowl. Mix until combined.
  • Using a cookie scoop or spoon, portion and drop unto cookie sheet. Use the back of a spoon top flatten
  • Bake for 5-7 minutes. Allow to cool on cookie sheet for an additional 5 minutes before removing from cookie sheet.
