Our recipe for Chocolate Peanut Butter Protein Cookies is the perfect sweet snack! Each cookie packs in 7g protein and the smaller size means a more manageable serving with less calories than store bought.

Adding in protein powder to my baked good recipes is one of my favorite ways to use protein powder besides the traditional shake. Protein powder does not lose it’s potency when used in baked goods, in fact, our bodies will absorb the same amino acids as if we had used the protein powder in shake form.

INGREDIENTS

  • 1/2 c. chocolate whey protein powder
  • 2 tbsp coconut flour
  • 1/4 tsp baking powder
  • 1/4 c. coconut sugar (or use swerve for WW friendly)
  • 1/4 tsp salt
  • 1 large egg
  • 3 tbsp liquid egg whites (or 1 large egg white)
  • 1/2 tsp vanilla
  • 1/2 c. peanut butter

INSTRUCTIONS

  1. Preheat oven to 350° F
  2. In a small bowl, combine protein powder, coconut flour and baking powder Stir to combine
  3. In a medium bowl combine coconut sugar, salt, egg, egg white, vanilla and peanut butter. Stir until well combined.
  4. Slowly add protein powder/coconut flour mixture to bowl. Mix until combined.
  5. Using a cookie scoop or spoon, portion and drop unto cookie sheet. Use the back of a spoon top flatten
  6. Bake for 5-7 minutes. Allow to cool on cookie sheet for an additional 5 minutes before removing from cookie sheet.
