Calling all pumpkin spice lovers! Our recipe for Pumpkin Oat Protein Cookies is the perfect fall cookies and each cookie has 6g protein. 1st Phorm released a Pumpkin Spice latte protein that I thought was the perfect addition to this recipe.

To give the cookies a fluffy, soft, cake like consistency, we use pumpkin puree, applesauce, and Greek yogurt to add moisture to the dough. We also use whey protein, instead of others, as using whey is the best protein to use to give your baked goods a fluffy, cake-like texture.

  • 1 c. almond flour
  • 70 g 1st Phorm pumpkin spice latte powder
  • 1/2 c. muesli
  • 1 c. oats
  • 1 tsp ground cinnamon
  • 1 tsp ground ginger
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/4 c. non-fat Greek yogurt
  • 1/4 c. unsweetened applesauce
  • 1/2 c. pumpkin puree
  • 1/2 c. swerve brown sugar (or coconut sugar)
  • 1 egg
  • 1/3 c sugar free syrup (or maple syrup)
  • 1 tsp vanilla extract

INSTRUCTIONS

  1. Preheat oven to 350° F
  2. In a large bowl, combine almond flour, protein powder, muesli, oats, cinnamon, ginger, baking soda & salt. Stir to combine.
  3. In a medium bowl combine Greek yogurt, applesauce, pumpkin puree, brown sugar, egg, syrup and vanilla extract. Stir until well combined
  4. Slowly add wet ingredients to dry ingredients. Stir to combine
  5. Using a cookie scoop or spoon, portion and drop unto cookie sheet.
  6. Bake for 12-15 minutes. Allow to cool on cookie sheet for an additional 5 minutes before removing from cookie sheet.
