Grandma Irene’s Stuffing – Lightened Up

One of the stand-out foods from holiday meals growing up was my Grandma Irene’s stuffing which stood out from boxed stuffing because of additions like sausage, ground beef, apples and raisins. The full recipe also called for a full stick of butter. All together, the butter, sausage and ground beef all made the original quite rich/heavy.

I decided to recreate a lighter version of the recipe by omitting the butter and just using a small amount of Brummel instead. Also by turkey sausage to replace the ground beef/sausage and adding bone broth instead of regular broth. This lightened up the recipe yet has all of the flavor of the original without the calories and fat.

INGREDIENTS

  • 3-3/4 c. Mrs. Cubbision’s Traditional Stuffing
  • 1 lb ground turkey sausage
  • 3 tbsp Brummel spread
  • 3/4 c. celery, diced
  • 3/4 medium onion, diced
  • 1 Granny Smith Apple, chopped
  • 1 c. seedless raisins
  • 2 c. chicken bone broth

INSTRUCTIONS

  1. Preheat oven to 375°.
  2. Pour stuffing into medium casserole dish.
  3. In a pan, cook turkey sausage until fully cooked, breaking up into small pieces while browning. Once cooked, add to casserole with stuffing
  4. In same pan, add brummel spread, celery and onion. Saute for 3-4 minutes then add apple.
  5. Saute for another 3-4 minute then add raisins. Continue to saute until raisins are plump and celery/onion are soft. Stir constantly once raisins have been added to prevent the raisins from burning.
  6. Add onion, celery, apples and raisins to casserole dish and give it all a good stir.
  7. Add chicken broth and stir until stuffing is moist.
  8. Bake uncovered, for 15-20 minutes until slightly browned.
