Our recipe for egg roll in a bowl tastes like an egg roll but healthier! We swapped out ground pork for ground turkey and unlike regular eggrolls, its not fried! Can easily be modified to be low carb.

Instructions
Soak the mung bean noodles in boiling water for 10 minutes or as directed on package
Brown the ground turkey in a large pan. Add garlic, soy sauce, and ginger. Cook until ground turkey is no longer pink
To same pan, add sesame oil, color slaw and sweet peppers. Add sweet chile sauce and whites from green onions. Cook until tender but still crisp, 1-2 minutes
Drain water from mung bean noodles, Add mung bean noodles to pan and stir to combine. Cook an additional 1-2 minutes
Garnish with Wonton strips and green portion of green onion
