INGREDIENTS

  • 1 1/2 c. liquid egg whites
  • 4 green onions, sliced
  • 3 oz fat free cream cheese, softened
  • Dash of salt & pepper
  • Cooking spray

INSTRUCTIONS

  1. Spray skillet with cooking spray and saute green onions until softened.
  2. In a large bowl, combine egg whites, cream cheese and dash of salt & pepper and mix until frothy.
  3. Add egg white mixture to pan with green onions. Cook over medium heat, without stirring, until mixture begins to set on the bottom and around the edges. Using a spatula or large spoon, lift and fold the partially cooked egg white mixture so the uncooked portion flows underneath. Continue cooking for 2 to 3 minutes or until egg white mixture is cooked through but is still glossy and moist.
  4. Remove from heat and serve.
