Our recipe for egg roll in a bowl tastes like an egg roll but healthier! We swapped out ground pork for ground turkey and unlike regular eggrolls, its not fried! Can easily be modified to be low carb.

INGREDIENTS
- 1 lb lean ground turkey (I used 99% lean)
- 1-1/2 tbsp less sodium soy sauce
- 1 tbsp garlic
- 1 tsp ginger
- 1 tbsp sesame oil (or olive oil)
- 10 oz tri-color coleslaw
- 1/2 c. mini sweet peppers
- 4 tbsp sweet chili sauce
- 2 green onions, chopped, white & green separated
- 2 oz mung bean noodles (glass noodles) – omit for low carb
- 8 tbsp wonton strips
INSTRUCTIONS
- Soak the mung bean noodles in boiling water for 10 minutes or as directed on package
- Brown the ground turkey in a large pan. Add garlic, soy sauce, and ginger. Cook until ground turkey is no longer pink
- To same pan, add sesame oil, color slaw and sweet peppers. Add sweet chili sauce and whites from green onions. Cook until tender but still crisp, 1-2 minutes
- Drain water from mung bean noodles, Add mung bean noodles to pan and stir to combine. Cook an additional 1-2 minutes
- Garnish with Wonton strips and green portion of green onion
