INGREDIENTS
- 1 1/2 c. liquid egg whites
- 4 green onions, sliced
- 3 oz fat free cream cheese, softened
- Dash of salt & pepper
- Cooking spray
INSTRUCTIONS
- Spray skillet with cooking spray and saute green onions until softened.
- In a large bowl, combine egg whites, cream cheese and dash of salt & pepper and mix until frothy.
- Add egg white mixture to pan with green onions. Cook over medium heat, without stirring, until mixture begins to set on the bottom and around the edges. Using a spatula or large spoon, lift and fold the partially cooked egg white mixture so the uncooked portion flows underneath. Continue cooking for 2 to 3 minutes or until egg white mixture is cooked through but is still glossy and moist.
- Remove from heat and serve.
